Jackson restaurateur John Tierre and his chef, Brian Myrick serve food and drink worthy of a foodie frenzy at their iconic Farish Street restaurant, Johnny T’s Bistro & Blues.
The Food
First, the food. Let’s talk about Johnny T’s Cajun Shrimp Pasta. The silky pasta sauce explodes in your mouth in a burst of Cajun flavor. Let’s be clear: this is not just a flat spicy flavor resulting from a dousing of Cajun seasoning. This is the sort of balanced, rich Cajun flavor achieved only by layers of ingredients and hours in the kitchen. Andouille sausage adds an appropriate smoky and spicy flair. Boiled shrimp piles on a sweet and elegant layer, and mushrooms soak up the married flavors while adding a nice textural element. Fresh scallions finish off this delectable entree with a brightness that is simply beautiful.
The Drink
The well appointed (and well stocked!) bar offers some surprising selections such as a couple of different ages of Pappy Van Winkle as well as hard-to-find cognacs.
Yes, you heard me correctly. It’s a legit Pappy spotting. While it lasts.
John Tierre’s love of food and drink is apparent, and he wants to share that with his customers. Johnny T’s hosts a variety of different special events each month. Free wine tastings and spirit samplings are some of his favorite things to host.
“I just want people to be able to try new things. Things that they may have not been exposed to before,” said Tierre.
